Tapioca Pearl
(Makes 1 serving)
1) Bring 500ml of water to a boil in a pot.
2) Add a quarter cup (roughly 50g) of tapioca pearls and stir for 30 seconds or until the tapioca pearls floats to the top.
3) Let it gently boil for 25-30 minutes depending on your desired chewiness. Stir occasionally.
4) Turn off the heat and cover. Let the pearls sit for 15 minutes.
5) Drain the water and add 2 tablespoons of brown sugar. Mix and let it soak for 10 minutes (skip this step if you prefer to have your tapioca pearls unsweetened.)

Notes: The tapioca pearl to water ratio for cooking is 1:10, i.e. if you want to make two serves then you use 100g tapioca pearl to 1L of water. Use the cooked tapioca pearls within three hours and do not refrigerate.
Powder Mix
(Makes 1 serving)
1) Gently shake the packet to mix the contents as they may have settled at the bottom of the packet during storage.
2) Add a quarter cup (roughly 40g) of powder and 75ml of boiling water to a shaker and mix well (WARNING: Do not shake as it may burst).
3) Add 75ml of cold water and ½ a cup of ice. Shake vigorously until combined.
4) In a large tumbler add your favourite topping (optional) then pour in the contents of the shaker.

Notes: If you do not have a shaker you can use a cup. Use a whisk to mix the powder. If you prefer a sweeter beverage add extra sugar during step 2.
Fruit Syrup
(Makes 1 serving)
1) Steep one tea bag in 200ml of hot water for 2-4 minutes depending on how strong you prefer your tea and then remove the tea bag.
2) Add 2-3 tablespoons of syrup and stir. If you prefer a sweeter drink, add sugar to your desired taste.
3) Add ½ cup of ice and your favourite topping.

Notes: If you would like to make a kid friendly version, simply leave out the tea and use cold water instead.
Tea
(Makes 1 serving)
Use one teabag per cup.
Heat water to 80-90c or let boiling water sit for 5 minutes to cool.
Pour over tea and leave to infuse for no more than 3 minutes.
